Sinful dark chocolate dessert!!

Ingredients Serving: 12

  1. For the chocolate cake. 225gms - all purpose flour.
  2. 350gms - fine sugar.
  3. 85gms - good quality cocoa powder.
  4. 1 1/2 tsp - baking powder.
  5. 1 1/2 tsp - baking soda.
  6. 2 eggs. 250 ml - milk .
  7. 125 ml - vegetable oil. 2tsp - vanilla extract. 250 ml - boiling water.
  8. Ganache for topping. Dark couverture chocolate - 200gms. Brandy good quality - 2 tbsp. Fresh cherries for garnish.
  9. For the filling. Mascarpone 200gms .Frozen berries - 100gms. Whipped cream which is already sweet - 3 cups.

Instructions

  1. Sift all dry ingredients except sugar. Preheat oven to 180 degree C. Beat sugar and eggs. Add milk, vanilla, oil and mix well. Add half the flour mixture and fold in adding the half the hot water.
  2. Mix rest of the flour and water alternating and folding it well till all lumps are gone. I used two 9 inch round pans and baked for 25 to 30 mins or until skewer comes out clean.
  3. Cool it completely before you fill and frost. I always bake one day ahead and leave the cakes in the fridge individually wrapped in cling film.
  4. Mix the mascarpone, cream and berries till its smooth and incoporated well. The amount of berries to be added depends on how tart one likes it. So add them gradually tasting it all the time.
  5. Fill and frost the cake and leave in the fridge.
  6. Melt the chocolate and add brandy. Cool and pour over the cake. let it drizzle down. Decorate with cherries.
