ABOUT Ricotta Cheesecake with Berry Mascarpone cream topped with Cherries RECIPE

Cheese making at home is the most therapeutic activity after a stressful day for me! An Italian cheese which is so versatile, fluffy like a pillow, creamy texture and you can do just anything with it. Bake your cheesecakes, fill your cannoli, make your tart filling, pizzas, dollop on a cracker. Its endless the possibilities of this amazing cheese!

Ingredients Serving: 10

  1. Base .1 cup - toasted dessicated coconut. 10 to 12 - mcvites oats and honey biscuits.
  2. Filling. 3 eggs separated. 1/2 cup + 2tbsp - fine sugar. 2 cups - ricotta cheese blended smooth. 1 tbsp - Amaretto liquer/ good quality brandy. 1/2 tsp - vanilla extract. 1 tbsp - zest of lemon. A good pinch of salt.
  3. Topping. Mascarpone cream- 150 gms room temp. Frozen or fresh berries - a handful crushed coarsely. Whipped cream- 1 cup. Fresh cherries.

Instructions

  1. Preheat oven to 175 degree C. Make the base first by mixing the toasted coconut and the biscuits in a blender to a fine paste . No butter is required here as the natural oils from the coconut plays well here.
  2. Press this mixture into a 8 inch round pan and leave it in the fridge.
  3. Whisk the egg yolks with 1/2 cup sugar till white and pale. Add the ricotta to the yolk mixture and combine well. Mix in the liquer, lemon zest, vanilla and salt.
  4. Beat your egg whites with the remaining sugar till soft peaks and gently fold into the ricotta mixture.
  5. Pour the mixture into the pan and bake it for about 30 to 40 minutes depending on one’s oven. Get it to room temperature and leave it in the refrigerator overnight.
  6. Make your topping by gently folding in the mascarpone and whipped cream with the berries and dollop on your cheesecake and top it with the cherries.
  7. Be creative and inventive with your topping. This cheesecake is a little sweet for me so i wanted to cut that sweetness with the tart berry topping and the flavours balanced beautifully.
