ABOUT Oats & Jaggery Thekua (Khajur) RECIPE

This is a traditional Thekua or Khajuria recipe which is one of its kind of Indian Cookie. This is revered prasad (offering to god) in the Chhath puja. It has been used as a sweet snack for centuries. This recipe was passed on to me from my mother and possibly she got it from her mother. This is a generation old tried and tested delicious recipe. I have added some modern ingredients (oats) to make it little healthy.

Ingredients Serving: 4

  1. Maida/All Purpose flour or Wheat flour – 3 cup
  2. Oats – 1 ½ cup
  3. Gud /Jaggery – 1 cup ( broken into small chunks)
  4. Mawa powder – ½ cup
  5. Coconut powder – ½ cup
  6. Oil or ghee – ½ cup
  7. Cardamom powder – ½ tsp
  8. Fennel seeds – ½ tbsp.
  9. Oil for frying

Instructions

  1. Grind the oats and make into a fine powder.
  2. In a pan take 1/2 cup water and let it boil. once boiling switch off the flame and add small chunks of Jaggery and melt it ( Do not boil – Just melt in the hot water).
  3. In a kneading bowl, sieve maida, oats powder, coconut powder, mawa powder, cardamom powder, fennel seeds and ghee mix well till the dough becomes crumbly.
  4. Add melted jaggery and make a hard dough.
  5. Take a small ball of dough (ping pong ball size) and give your desired shape (round, heart, square).
  6. Deep fry after 10 to 15 minutes (Fry on high for 30 seconds on each side and then turn the flame to medium).
