ABOUT Muri Ghonto (Rice with Fish Head) RECIPE

A popular Bengali rice dish with fish head that is sweet and spicy.

Ingredients Serving: 2

  1. Fish head 1 (cleaned)
  2. Rice 150 gms ( I used gobindobhog rice)
  3. Mustard oil 5-6 Tbsp
  4. Whole garam masala ( 1 cinnamon stick, 4 green cardamom, 4 cloves)
  5. Bay leaves 1-2
  6. Onions 1 big (chopped)
  7. Ginger Paste 1 Tsp
  8. Potato 1 big (cubes)
  9. Tomato 1 small (chopped)
  10. Cumin powder 3 tsp
  11. Green chilies 1-2 (slit)
  12. Turmeric powder as required
  13. Salt to taste
  14. Sugar 1/2 tsp
  15. Ghee 1 1/2 tsp

Instructions

  1. Marinate the cleaned fish head with little salt and turmeric powder.
  2. Heat enough oil in a pan and fry the fish heads. Keep aside.
  3. Fry the potatoes and keep aside.
  4. Now, add the remaining oil in the pan. Add bay leaves, whole garam masala.
  5. Add onions and ginger paste. Put chopped tomatoes and cook for sometime.
  6. Add cumin powder and turmeric powder.
  7. Wash the rice and drain the water.
  8. Add rice to the pan and cook for 2-3 minutes. Do not over fry.
  9. Add salt and sugar. Put the green chillies.
  10. Add sufficient warm water for the rice to cook.
  11. Add the fried heads and poke them with a spoon to break into pieces.
  12. Cover and cook until rice is done. You can add more water as required.
  13. It should have a mish-mash consistency.
  14. Once done, pour the ghee and serve hot.
