Lemon Rice

Ingredients to make Lemon Rice

  • 1 cup Basmati rice (Fresh/Leftover)
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 1 tablespoon groundnuts
  • 1/3rd teaspoon asafoetida (hing)
  • 1 tablespoon oil
  • 1/2 teaspoon turmeric powder
  • 5 Curry leaves
  • 1 tablespoon lemon juice
  • Salt to taste

How to make Lemon Rice

  1. Wash and cook the basmati rice in a pressure/rice cooker. Note that the rice must not be overcooked. You may also use left over rice for this dish.
  2. Take a pan, heat the oil, add in mustard seeds and let them crackle.
  3. Then add the urad dal, chana dal, asafoetida, ground nuts, curry leaves and salt to taste. Stir this well and cook for 2 minutes or so.
  4. Next, pour in the lemon juice and let the mixture cook for 1 minute.
  5. Then instantly put in the boiled rice and mix all the ingredients well together. Let this cook for 3-4 minutes.
  6. Serve hot with a side of raita or your favourite chutney.
