ABOUT Lemon Rice RECIPE

As my favourite South Indian traditional breakfast recipe, lemon rice never tends to dissapoint at any given time.

Ingredients Serving: 2

  1. 1 cup Basmati rice (Fresh/Leftover)
  2. 1 teaspoon mustard seeds
  3. 1 teaspoon urad dal
  4. 1 teaspoon chana dal
  5. 1 tablespoon groundnuts
  6. 1/3rd teaspoon asafoetida (hing)
  7. 1 tablespoon oil
  8. 1/2 teaspoon turmeric powder
  9. 5 Curry leaves
  10. 1 tablespoon lemon juice
  11. Salt to taste

Instructions

  1. Wash and cook the basmati rice in a pressure/rice cooker. Note that the rice must not be overcooked. You may also use left over rice for this dish.
  2. Take a pan, heat the oil, add in mustard seeds and let them crackle.
  3. Then add the urad dal, chana dal, asafoetida, ground nuts, curry leaves and salt to taste. Stir this well and cook for 2 minutes or so.
  4. Next, pour in the lemon juice and let the mixture cook for 1 minute.
  5. Then instantly put in the boiled rice and mix all the ingredients well together. Let this cook for 3-4 minutes.
  6. Serve hot with a side of raita or your favourite chutney.
