Gobhi ka Madra

Ingredients to make Gobhi ka Madra

  • One cup gobhi or cauliflower florets
  • 2 cup curd not very sour
  • 1.5 tbsp desi ghee
  • One tsp jeera
  • One tsp saunf
  • Green cardamom - 2
  • Cloves or laung - 3-4
  • One tsp grated ginger
  • 1/4 th tsp haldi
  • salt as per taste
  • Whole dry red chilli -1
  • Water - 1.5 cup

How to make Gobhi ka Madra

  1. First heat ghee in pan. To it add jeera, saunf, elaichi, red chilli, laung.
  2. Then as they crackle add curd then salt and haldi.
  3. Cook the mix at high to medium flame till curd gets dry and something like paneer texture is collected and oil floats on it.
  4. This will take 15-20 min be patient and let curd dry completely when it starts, reduce flame to low.
  5. Then add gobhi florets mix well. Cook at medium flame covered till they are slightly more than half done.
  6. Add 1.5 cup water. Cook till the gravy gets texture, becomes thick and ghee comes up.
