Ingredients to make Roasted Brinjal Pickle

  • mustardseeds 1 tsp
  • Dried red chillies 5
  • Methi seeds: A pinch
  • Urad dal 1 tsp
  • hing powder half tsp
  • coriander leaves 3 tsp
  • Jaggery half tsp
  • Oil 2 tsp
  • One big brinjal
  • Green chillies two
  • Tamarind lemon size
  • Salt

How to make Roasted Brinjal Pickle

  1. First roast brinjal directly on the stove and remove it's skin and keep brinjal paste aside.
  2. Next take a pan, put oil and fry mustard seeds, methi seeds, dry chillies, urad dal, Hing, tamarind and jaggery, Green chillies and coriander.
  3. Roast everything well and serve hot.
