Ingredients Serving: 2

  1. Mutton - 1/2 kg
  2. Onions medium size and thinly sliced - 2
  3. Potatoes medium size peeled and cut - 2
  4. Tomatoes medium size very finely chopped - 2
  5. Garlic cloves peeled and grated - 4-5
  6. Green chilies finely chopped - 2
  7. Green cardamoms crushed - 2-3
  8. Bay leaves - 2
  9. Ginger peeled and grated - 1 inch
  10. Cinnamon stick - 1
  11. 2 - tsp cumin powder
  12. 2 - tsp coriander powder
  13. 1 - tsp chili powder
  14. 1 - tsp garam masala powder
  15. 1 - tsp turmeric powder
  16. Fresh cilantro finely chopped for garnish
  17. Oil (mustard oil preferably)
  18. Salt to taste

Instructions

  1. Marinate the mutton with salt and turmeric. Leave for couple of hours or overnight.
  2. In a deep pan or pressure cooker, heat 2 tbsp of oil. Drop the cinnamon stick and crushed cardamom pods.
  3. When it sizzles, add grated garlic, ginger and green chilies. Cook for 2 mins. Add onion, season with salt and allow it to soften.
  4. Add potatoes and turmeric, stir well and cook for a few mins until potatoes become golden.
  5. Add tomatoes along with the spices - cumin powder, coriander powder, chili powder and little bit turmeric powder.Stir and allow it to cook for few minutes.
  6. Add the marinated mutton, stir and cook for a few more minutes. Now, add enough water to drown the mutton pieces.
  7. Let it simmer for about 40 mins, stirring occasionally in between.
  8. If using pressure cooker, cover the pressure cooker, lower the heat to medium, allow it to whistle at least 6 to 7 times. Open it very carefully. Add garam masala powder, stir and cook for a couple more minutes.
  9. Check for salt and add any, if required. Squeeze in some lime juice and sprinkle handful of freshly chopped cilantro leaves.
