Ingredients Serving: 4

  1. 3 medium sized sweet potatoes
  2. 1 tbsp ghee
  3. 3/4 cup water
  4. 4 tbsp sugar
  5. 1/4 tsp Cardamom Powder
  6. A few saffron strands
  7. 2 tbsp chopped nuts, with 2 tbsp roasted melon seeds
  8. Rose petals
  9. edible leaf

Instructions

  1. Clean and wash sweet potatoes and pressure-cook for 3 to 4 whistles. Allow the steam to escape before opening.
  2. Peel and mash the sweet potatoes and keep aside.
  3. Heat the ghee in a non-stick pan, add the mashed sweet potatoes and sauté on a medium flame for 2 to 3 minutes.
  4. In another pan add water, sugar and cardamom powder, mix well and simmer for 5 minutes.
  5. Pour this syrup into sweet potatoes and cook till ensure that the mixture is completely dry.
  6. Add the saffron and mixed nuts and roasted melon seeds.
  7. Serve on edible leaf decorated with rose petals.
