Besan Ka Seera / Lappi | Gram Flour Sweet Gruel

Ingredients to make Besan Ka Seera / Lappi | Gram Flour Sweet Gruel

  • Besan | Gram Flour - 4 tablespoons
  • Ghee / Clarified Butter - 2 1/2 Tablespoons
  • Sugar / Shakkar - To taste (I added 2 Tablespoon)
  • Water or Milk - 2 cups
  • Green Cardamom Powder - 1-2 pinch
  • Black Cardamom Powder - 1-2 Pinch
  • Black Pepper Corns - 5-8 Pounded coarsely

How to make Besan Ka Seera / Lappi | Gram Flour Sweet Gruel

  1. Keep a heavy bottom pan on medium heat and add ghee to it.
  2. Once the ghee is warm reduce the heat to low and add gram flour or besan.
  3. With a wooden spoon or spatula roast the besan / gram flour till it changed colour tone to brown and the raw smell is replaced by a nutty aroma. 10-15 minutes approximately. Keep stirring to avoid burning the gram flour.
  4. Stir in the powdered spices.
  5. Add water and stir properly so that no lumps are formed. Increase the heat to medium high.
  6. The seera will look grainy and lumpy so keep stirring till it becomes smooth and nice.
  7. Reduce the heat and add sugar or shakkar. Stir it properly and let it simmer for 20-30 seconds on low heat.
  8. If the seera has thickened you can add a little warm water. It should be of a thick soup like consistency which you can sip.
  9. Pour in mugs or bowls and consume when hot.

My Tip:

It is essential to roast the besan well so the raw smell goes away otherwise it will taste doughy. You can replace water with milk for dry cough but use water if there is mucus along with cough. On other days it depends on your taste. If not using as remedy you can add raisins and shredded almonds too. Also, if using as cold remedy, do not have water after this and sip it just before bedtime for a good sleep. The Maharashtrian sheera or halwa is different from seera. Seera has a thick soup like consistency.
