Ingredients to make Ridge Gourd with Jowar-Wheat flour dumplings

  • 2-3 garlic cloves, finely minced
  • 2-3 Ridge gourds, peeled(roughly) and cut into 1 inch pieces
  • 2 teaspoon red chilli powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 tablespoon oil
  • Salt to taste
  • handful of chopped coriander seeds for garnish
  • For the Jowar-Wheat flour dumplings
  • 1 cup Jowar (Sorghum) flour
  • 1 cup Wheat Flour
  • 2 teaspoon green chilli paste
  • 1 teaspoon Ajwain (Carom seeds)
  • 1/4 teaspoon turmeric powder
  • Salt to taste

How to make Ridge Gourd with Jowar-Wheat flour dumplings

  1. For the Jowar-Wheat flour dumplings
  2. In a mixing bowl add all the ingredients . Mix well.
  3. Add water and mix to make a soft, pliable dough.
  4. Shape small lemon sized balls of the dough into cylindrical croquette shaped dumplings. Keep them aside Pinch off a small lemon sized ball of the dough and roll into a log or an elongated dumpling.
  5. Make similar dumplings from the rest of the dough. Keep them covered.
  6. Heat oil in a heavy bottom pan.
  7. Add the mustard seeds. Once they splutter add the cumin seeds,garlic, turmeric powder. Fry for a few seconds and add the Ridge gourd pieces.
  8. Add salt and Red chili powder, mix and sauté for a few seconds.
  9. Add about ½ cup water. Place dumplings one by one over the Ridge gourd. Do not stir or mix.
  10. Cover and cook on low flame till the dumplings are done. (Insert a knife or cake tester to check)
  11. Only after the dumplings are cooked, stir the curry to mix.
  12. Garnish with fresh coriander leaves.Serve hot.
