Ingredients to make Sun Dried Tangy Indian Gooseberry Mouth Freshener | Chatpati Amla Supari / Kees

  • Amla / indian gooseberry -250 gm (grated)
  • ginger juice - 1 tablespoon ( 1 inch ginger)
  • Carom Seeds (ajwain) - 1 teaspoon
  • lemon Juice - 1/2 a lemon
  • Table salt - 1 teaspoon
  • Rock salt - 1 leveled teaspoon
  • asafoetida - 1-2 pinch

How to make Sun Dried Tangy Indian Gooseberry Mouth Freshener | Chatpati Amla Supari / Kees

  1. Wash and pat dry the fresh unblemished amla fruit.
  2. Grate and keep aside.
  3. In a plate mix rock salt, table salt, ajwain (carrom seeds), asafoetida and mix properly.
  4. Add this to the grated amla along with little ginger juice and lemon juice.
  5. Spread it out on a plate and keep this in sunlight for 5-6 days.
  6. The drying time will depend on the amount of sunlight and heat it gets.
  7. Once the amla changes color shuffle it a few times in a day so that it dries evenly and no moisture remains.
  8. Once the grated fruit dried completely and turns brown in color it is ready to be stored in airtight container to be used any time you desire.

My Tip:

It is a unique experience to have a tasty, tangy supari and then the sweetness that lingers in your mouth if you drink water just after having it. Some people add sugar to it but I use sugar in the wedged candy and prefer this one to be savory. Make sure you dry the grated amla properly or the supari / kees will go bad. As time passes the supari / kees will acquire darker color and will taste even better. you can see the color difference in one of the pix.
