Instant Lehsuni Baingan

Ingredients to make Instant Lehsuni Baingan

  • 3 small brinjals
  • 3 medium potatoes
  • 1 tsp ginger garlic paste
  • 1tsp akkha jeera
  • Pinch of hing
  • 1tsp haldi powder
  • 1tsp dhania powder
  • 1/2 tsp lal mirch powder
  • 1/2 tsp garam masala
  • salt to taste
  • jeera powder optional

How to make Instant Lehsuni Baingan

  1. Cut brinjals in halves and then into pieces as required. I cut it lengthwise.
  2. Peel and cut the potatoes same as brinjals.
  3. Take a pan or wok. Add oil and akkha jeera n pinch of hing. Make it sputter.
  4. Now add ginger garlic paste and saute. Then add potatoes and brinjals in it.
  5. Add all dry masalas and lid need to fix.
  6. Stir occasionally.
  7. Garnish with coriander leaves.
  8. Ready to serve with chapatis.

My Tip:

I took tawa to cover my wok. As its my mother's nuskha so that sabji/potatoes could cook nicely.
