ABOUT Plain Chicken Curry RECIPE

This is a very basic but super tasty & delicious chicken curry, which used to rock our Sundays when my grandmother used to cook it in her own expert way..

Ingredients Serving: 5

  1. Chicken on bone : 1 kg
  2. Chopped capsicum : 1 cup
  3. Turmeric powder : 1 tablespoon
  4. Kashmiri red chilli powder : 2 tablespoon
  5. Lemon juice : 2 tablespoon
  6. Ginger garlic paste : 2 tablespoon
  7. Cinnamon : 2 sticks (each of 1 inch)
  8. Cloves : 3 to 4
  9. Green cardamoms : 4
  10. Bay leaf : 2
  11. Black peppercorn : 4
  12. Cumin powder : 1 teaspoon
  13. Coriander powder : 1 teaspoon
  14. Onions (very finely chopped) : 3
  15. Tomato (chopped) : 3
  16. Shahi garam masala powder : 1 tablespoon
  17. Cooking oil : 3 tablespoon
  18. Salt to test
  19. Little sugar

Instructions

  1. Wash the chicken well & marinate it with 1/2tbsp turmeric powder,1tbsp kashmiri red chilli powder,lemon juice,some salt & 1tbsp ginger garlic paste for an hour.
  2. Heat up oil in a pan & then temper with cinamon,cardamom,peepercorn,bay leaves,cloves,a pinch of sugar & then add chopped onions(add a pinch of salt in it so that the onion caramelizes well).
  3. When the onion gets fried well & turns brown,add 1tbsp ginger garlic paste,mix well & after 2 minutes add the cumin & coriander powder.
  4. Now after 5minutes,add the chopped tomato & keep cooking at a medium flame until the tomato gets fully smashed.The pan must be covered with a lid to get it done.
  5. After the tomato is well cooked add a little turmeric powder & 1tbsp(or more acc to your taste) red chilli powder & mix well.
  6. After a minute add the marinated chicken,mix well,cover the pan with a lid & keep cooking at a medium flame.
  7. The chicken will give off water in which it gets boiled.
  8. When the chicken is 70% cooked,add the capsicum,salt & again cover the pan until the chicken is fully cooked.
  9. When the chicken is fully cooked & the gravy thickens,sprinkle shahi garam masala on it,mix well & its ready to serve now with hot rice,puri,paratha or even bread.
