ABOUT Gul Poli (Jaggery Roti) RECIPE

Gul Poli is traditionally made during makar sankrant festival. It was an alternative to eating til ladoo and much easier to handle too.

Ingredients Serving: 10

  1. For dough-
  2. 1 cup Wheat Flour
  3. 1 cup plain flour
  4. 1 tsp hot oil
  5. Salt to taste
  6. Warm water as per need
  7. FOR STUFFING---
  8. 3/4 to 1 cup jaggery (gul) grated
  9. 1 tbsp poppy seeds (khush khus)
  10. 2-1/2 tbsp sesame seeds
  11. 1-1/2 tbsp gram flour (besan)
  12. 2-3 tsp ghee/clarified butter
  13. 1 tsp cardamom powder

Instructions

  1. To make dough-
  2. Heat 1 tsp of oil. Combine flours with salt and hot oil. Add warm water to form semi soft dough. Cover and leave to rest for 15-20 minutes.
  3. To make stuffing-
  4. Heat ghee in pan. Add besan and stir fry till its aromatic and darkens in color. Cool. Dry roast sesame seeds and poppy seeds one at a time. Cool and grind them together.
  5. Combine jaggery, besan, cardamom powder, and sesame and poppy seeds mixture.
  6. Keep a tawa/thick based pan to heat.
  7. Make lemon sized balls of the dough. Cover them.
  8. Place a tbsp of stuffing in the center of the disc and seal it well on all sides. Dip it again in flour and roll it out in a bigger sized disc shape taking care the stuffing does not come out.
  9. Add a tsp of ghee on medium hot tawa. Spread it out evenly. Place the roti/poli on the tawa. Keep the flame medium.
  10. Apply ghee on top and carefully spread it. Flip the Poli. Cook for few seconds till it turns darker.
  11. Press gently for even cooking. Flip again. Press it down and remove to a plate. Similarly make the other polis. Serve them hot with dollop of ghee or have them as is.

What is plain flour? Is it Maida? because receipe says wheat flour and plain flour.
