ABOUT Kachche Keeme Ke Kofte RECIPE

Another yummy dish from my mother's repertoire.

Ingredients Serving: 4

  1. For the Kofta-
  2. 3/4 Kg Mutton(lamb) Mince
  3. 1/2 tsp garlic and ginger very finely chopped
  4. 1 tsp finely chopped onion
  5. 1 green chilli finely chopped after removing seeds
  6. 1/3 tsp powdered mixture of nutmeg and mace
  7. 1/4 tsp Salt
  8. For the Gravy-
  9. 2 tbsp oil (Rice Bran/Olive or any other cooking oil that you use)
  10. 3 large onions finely chopped
  11. Ginger 1 inch piece minced
  12. Garlic 6-7 pods minced
  13. 2 bay leaves
  14. 5-6 black pepper corns
  15. 3 tsp Coriander powder
  16. 1 tsp Chilli Powder
  17. 3/4 tsp turmeric powder
  18. 2 large tomatoes pureed
  19. 1/2 cup fresh curd
  20. Salt to taste
  21. Coriander leaves about 1/3 cup(as per taste)
  22. 3 cloves
  23. 1" cinnamon stick

Instructions

  1. To Prepare gravy-
  2. Mix ginger garlic paste , coriander powder, chilli powder, turmeric powder and 1/2 tsp salt in a bowl, add some water and keep it aside.
  3. In a large heavy bottomed pan heat oil and add bay leaves, cloves,pepper corns and cinnamon and let them crackle.
  4. Add the onion, saute till it becomes colorless. Now add ginger garlic paste mix(made in step 1) to this and saute till oil separates.
  5. Add pureed tomatoes to this and saute again. When oil separates once again, add beaten curd to this and keep stirring.
  6. Once that starts boiling add about 3 cups of water and let it come to a boil.
  7. Now for Kofta -Mix all kofta ingredients(mutton mince,ginger,garlic,onion, green chilli, nutmeg & mace powder and salt) together.
  8. Once everything is nicely mixed make small balls (walnut size or little bigger) with the mixture.
  9. When gravy starts boiling start dropping these koftas into it one by one. Once you have put all in the gravy, reduce the heat.
  10. Let this simmer on low heat till the gravy thickens and mutton koftas are cooked.
  11. Adjust seasoning in the end.
  12. Add green coriander and cover for some time. Serve hot with chapati or paratha.
