Ingredients to make Aviyal

  • A. To Coarsely Grind-
  • Shredded coconut 3/4 cup
  • green chillies 4
  • cumin seeds 1/4 tsp
  • salt to taste
  • B. To Cook-
  • Vegetables thinly sliced(long beans, Plantain, yam/suran, ash gourd, drumsticks, carrot)- 2 cups
  • green chillies slit
  • turmeric powder 1/4 tsp
  • Well beaten thick yogurt/curd 1/2 cup
  • coconut oil 2 tbsp
  • curry leaves 2 sprigs
  • salt to taste

How to make Aviyal

  1. Grind shredded coconut, green chillies, cumin seeds with salt and turmeric powder into a coarse paste and keep it aside.
  2. In a heavy bottomed pan or an earthenware pot, add all the vegetables, green chillies, salt & turmeric & cook them by adding water(very little) just enough to cook the vegetables.
  3. When the veggies are cooked well, add the ground coconut paste and stir well to coat all the veggies to the ground mixture and cook for another 2 minutes.
  4. Now add yogurt & give it a stir. Do a salt taste test.
  5. Drizzle coconut oil over the aviyal & add curry leaves. Give it a stir once and then turn off the stove.
