Ingredients to make Mixed vegetable oats rava khichdi

  • Rava or semolina - 1/2 cup
  • Oats - 1/2 cup
  • Mixed vegetables (carrots, peas, capsicum, beans) - 1/2 cup
  • onion - 1 medium sized - thinly sliced
  • tomato - 1 , finely chopped
  • Green chilli - 2 , finely chopped
  • ginger - finely chopped - 2 tsp
  • curry leaves - 5-6
  • mustard seeds - 1tsp
  • turmeric powder - 1tsp
  • rock salt - to taste
  • oil - for tempering
  • ghee - 1tbsp
  • water - 2 cups for 1 cup of (oats+rava)

How to make Mixed vegetable oats rava khichdi

  1. In a pan, heat the oil and add the mustard seeds.
  2. Once the mustard seeds begin to crackle, add the ginger, green chillies and curry leaves.
  3. Add the sliced onions, turmeric powder and saute for a minute or two.
  4. Add the tomatoes and other vegetables and saute for a good 3-4 minutes.
  5. Add the water, salt and bring it to a boil.
  6. Once the water starts bubbling, add the oats+rava mixture while constantly stirring.
  7. Add the ghee and mix well. Cover the pan with a lid and leave it on a low flame until the rava is cooked.
  8. Mix well and serve hot with coconut chutney.

My Tip:

Add a pinch of sugar to the onions while sauteeing so that they get caramelized.
