Cherry and Peach Clafoutis

Ingredients to make Cherry and Peach Clafoutis

  • 1/2 Cup All Purpose Flour
  • 1 Tbsp Melted Butter
  • 2 Large Eggs
  • 1/4 Tsp Salt
  • 3 Tbsp Granulated White Sugar
  • 3/4 Cup Full Fat Milk
  • 1/2 Tsp Vanilla Extract
  • Cherries & Peaches Ingredients:
  • 1/2 Cup Cherries pitted
  • 3-4 Peaches pitted and quartered
  • 1 Tbsp Butter
  • 1 Tbsp Granulated Sugar
  • Decoration Ingredients:
  • Icing Sugar for Dusting

How to make Cherry and Peach Clafoutis

  1. Preheat the oven to 220 degree Celsius. Also grease a pie dish.
  2. Stem and pit cherries, keep them aside. Peel the skin of the peaches, pit and quarter them.
  3. Using a hand blender, mix together flour, milk, salt, eggs, butter, sugar and vanilla. Process this a minute until they blend into a smooth paste.
  4. Scrape the sides to incorporate and leave it to rest.
  5. Take a non stick skillet, melt in the butter till it is bubbly.
  6. Put in the cherries and peaches, cook till they are soft and release juices.
  7. Sprinkle sugar and mix well till the sugar dissolves and turns into a syrup.
  8. Now pour the fruits into the prepared pie pan followed by the batter. Bake it for 18- 20 minutes until its puffed and set.
  9. Note, do not open the oven door during this time period as it might collapse.
  10. Once cooked, serve immediately with sugar dusting on top.
