Mini Hasselback Potatoes

Ingredients to make Mini Hasselback Potatoes

  • 4 Mini Potatoes
  • 3 Tbsp Olive Oil
  • 4 Cloves of garlic thinly sliced
  • Salt to taste
  • 1 Tsp Rosemary
  • 1 Tsp Red Chili Flakes
  • Mozzarella Cheese grated

How to make Mini Hasselback Potatoes

  1. Preheat the oven to 200 degree Celsius.
  2. Wash and scrub the potatoes but do not peel the skins.
  3. Start from one end of the potatoes and make slits for about 1/2 a centimeter apart, but remember not to cut all the way through.
  4. Take a small bowl, mix in olive oil, salt, garlic, rosemary, chili flakes and grated mozzarella together.
  5. Place the potatoes on a baking sheet and rub the mixture in between the slits.
  6. Bake these potatoes for 40 minutes or so till they are crispy on the outside and soft on the inside.
  7. Serve hot with a side of ketchup or mayonnaise.
