Kerala Stew

Ingredients to make Kerala Stew

  • 2 Carrots (small) chopped
  • 2 Potatoes chopped
  • 1 cup Peas
  • 80gms French Beans
  • 6 Shallots sliced
  • 2 1/2 cups Coconut milk (thin)
  • 1 cup Coconut milk (thick)
  • 4 Garlic crushed
  • 1 tsp Ginger crushed
  • 2 Green chilies sliced
  • 1 inch Cinnamon stick
  • 4-5 Cloves crushed
  • 4 Green Cardamoms crushed
  • 12 curry leaves
  • 3 tbsp coconut oil
  • 1 tsp Black Pepper
  • Salt to taste

How to make Kerala Stew

  1. Heat oil in a pot. Add cinnamon, cardamoms, cloves and black pepper. Saute for a couple of minutes.
  2. Add the ginger, garlic, green chilies, sliced onions and curry leaves. Saute till the onions become tender.
  3. Add all the chopped vegetables and stir well.
  4. Add thin coconut milk. Cover the pan and cook till vegetables are tender and done.
  5. Add the thick coconut milk, stir well and simmer for a minute.
  6. Heat oil in a kadai and fry curry leaves till crisp. Season the stew with this.
  7. Serve kerala style vegetable stew with rice or appams.
