ABOUT Simply Chocolate Cheesecake RECIPE

This Cheesecake is inspired by none other then Domestic Godess- Nigella.

Ingredients Serving: 8

  1. For base: 1 1/3 cup oreo crumbs
  2. 50 gm butter
  3. 1 tbsp coco powder
  4. For filling: 200 gm Dark chocolate
  5. 2 1/2 cup Cream cheese
  6. 1 cup sugar
  7. 1 tbsp cornflour
  8. 3 eggs
  9. 3 egg yolks
  10. 100 gm sour cream
  11. 1/2 tsp Cocoa powder
  12. 1 tbsp hot water
  13. for sauce: 100 gm dark chocolate chips
  14. 100 gm heavy whipping cream
  15. 2 tsp sugar

Instructions

  1. Preheat the oven at 180C for 20 mins. For base take crushed Oreo crumbs in the bowl & add cocoa powder & mix well then add melted 50 gm butter & mix.
  2. Take a springform pan and line it with parchment paper, grease with butter. Put the crumbs on the base and gently press on the bottom of the pan. Place the pan in the the freezer to firm.
  3. To make the filling, melt 200 gm dark chocolate in the microwave and keep it aside to cool. In a bowl take room temperature cream cheese and beat until soft, then add 1 cup sugar and cornflour & beat again so that sugar is well combined with cream cheese.
  4. To cream cheese mix, add eggs one by one and then the egg yolks and finally the sour cream. Mix well. In a small bowl dissolve one tsp of coco powder in one tbsp of hot water and add to the melted chocolate.
  5. Pour the melted chocolate mix in the cream cheese mix and mix until the cheesecake batter is smooth. Remove the springform pan from the freezer and wrap it well with foil so that water does not seep in while baking in water bath.
  6. Pour hot boiling water in a bigger pan and gently place the spring form pan in it. Carefully place the pan the preheated oven to bake for an hour.
  7. Remove the spring form pan from the oven and peel the aluminium foil, and place it on cooling rack and after some time put it in the fridge to cool completely.
  8. Before serving make chocolate sauce by gently heating the cream and then pour it over the chocolate chips and sugar. let the chocolate melt and then whisk well. When the sauce is cool pour over the chocolate cheesecake and garnish with chocolate curls.
