ABOUT Baked Veggies, nuts and cheese salad RECIPE

Vegetables and cottage cheese baked with basil oil and mixed with Feta & Parmesan cheese , walnuts & dried cranberry

Ingredients Serving: 3

  1. Chopped Basil – 2 tsp
  2. Pizza topper – 1.5 tsp
  3. Garlic – 2 clove
  4. Olive Oil – 2 tsp
  5. Pepper – To sprinkle on the oil mix
  6. Salt to taste
  7. Cherry tomatoes – 15pieces
  8. Chopped Green Capsicum – ¾ cup
  9. Potato – 1
  10. Onion – 1
  11. Cottage Cheese - 10 cubes of 1 inch each
  12. Feta cheese 1 inch cube– 10 pieces
  13. Dried cranberries – 1 tblsp
  14. Waltnut – 5
  15. Parmesan cheese – 1 tblsp
  16. Pepper – 1 tsp to mix on the salad
  17. Any Italian salad dressing – 2 tsp

Instructions

  1. Boil Potato in pressure cooker for 2 whistles (or until cooked). Chop them into 1 inch cubes.
  2. Chop Capsicum, onion into big chunks of 1 inch size.
  3. Chop the walnuts
  4. Chop basil and add pizza topper, salt, pepper, garlic and olive oil into a small bowl and mix them well.
  5. Mix Capsicum, onion, potato,cottage cheese and tomato with the basil oil done in previous step.
  6. Add salt and sprinkle pepper
  7. Mix well and let this marinate for an hour.
  8. Pre heat oven at 200 deg for 5 mins
  9. Place the oven tray and bake for 15 minutes mixing once in between the vegetables.
  10. Take out and then add cranberry, walnuts feta cheese, parmesan cheese and mix well.
  11. Place them in the same oven which will still have the heat. This heat is enough for the cheese to get melted.
