Ingredients to make Baked Veggies, nuts and cheese salad

  • Chopped Basil – 2 tsp
  • Pizza topper – 1.5 tsp
  • garlic – 2 clove
  • olive Oil – 2 tsp
  • Pepper – To sprinkle on the oil mix
  • salt to taste
  • Cherry tomatoes – 15pieces
  • Chopped Green capsicum – ¾ cup
  • potato – 1
  • onion – 1
  • cottage cheese - 10 cubes of 1 inch each
  • Feta cheese 1 inch cube– 10 pieces
  • Dried cranberries – 1 tblsp
  • Waltnut – 5
  • Parmesan cheese – 1 tblsp
  • pepper – 1 tsp to mix on the salad
  • Any Italian salad dressing – 2 tsp

How to make Baked Veggies, nuts and cheese salad

  1. Boil Potato in pressure cooker for 2 whistles (or until cooked). Chop them into 1 inch cubes.
  2. Chop Capsicum, onion into big chunks of 1 inch size.
  3. Chop the walnuts
  4. Chop basil and add pizza topper, salt, pepper, garlic and olive oil into a small bowl and mix them well.
  5. Mix Capsicum, onion, potato,cottage cheese and tomato with the basil oil done in previous step.
  6. Add salt and sprinkle pepper
  7. Mix well and let this marinate for an hour.
  8. Pre heat oven at 200 deg for 5 mins
  9. Place the oven tray and bake for 15 minutes mixing once in between the vegetables.
  10. Take out and then add cranberry, walnuts feta cheese, parmesan cheese and mix well.
  11. Place them in the same oven which will still have the heat. This heat is enough for the cheese to get melted.

My Tip:

You may also mix any Italian dressing along with the vegetables before baking.
