  16. Dried oregano- ¼ teaspoon
  17. Olive oil- 2 tablespoons
  18. Salt and Pepper- to taste
  19. Sugar- ¼ teaspoon

Instructions

  1. For marinara sauce- Add the olive oil to a pan and allow to warm. Once warm, add the chopped garlic and fry it for a few seconds and allow it to sizzle but do not let it brown.
  2. Add the tomato puree, red chilli flakes, basil, oregano, a pinch of salt, pepper and allow it to simmer for about 10-15 minutes until the sauce has thickened and the oil is seen on the surface.
  3. Taste it and adjust the salt and pepper accordingly. Remove from the heat and allow it to cool a little. Meanwhile make the fritters.
  4. For ricotta fritters- Add the ricotta cheese to a bowl and to it and add all the other ingredients except olive oil, salt and pepper and mix well. Add a pinch of salt and pepper and give the mixture a taste to check for salt and pepper.
  5. If not, adjust it accordingly. Divide the mixture into 8 parts and roll into balls. Flatten it to get even sized fritters.
  6. Add the olive oil to a skillet and allow it to become hot. Pan fry the fritters until golden brown on both sides. Use two spatulas for easy handling. Serve the fritters with the marinara sauce.
