ABOUT Poori Bhaji RECIPE

Poori Bhaji is a very popular breakfast of Northern India,here I am sharing my favourite kathiyawadi style poori bhaji recipe.

Ingredients Serving: 4

  1. Potatoes – 4 medium (500 gms)
  2. Tamarind pulp /Imli-2 tbsp
  3. Jaggery/Gur – 2 tbsp
  4. Turmeric/Haldi – 1tsp
  5. Kashmiri Chili Powder – 2 tsp
  6. Coriander Powder/Dhaniya – 1tsp
  7. Ginger grated/Adrak – 1 tsp
  8. Green chilies slit lengthwise – 3
  9. Fresh Coriander – 2 tbsp
  10. Salt – to taste
  11. Water – 3-4 cup
  12. TEMPERING/TADKA
  13. Cooking Oil – 4 tbsp
  14. Mustard seeds /Rai- 1 tsp
  15. Fenugreek seeds/Methi dana -1/3 tsp
  16. Urad daal/White Lentils -1 tbsp
  17. Whole red chilies – 3
  18. Asafoetida /hing- 1/2 tsp
  19. Curry leaves – 10
  20. Sugar – 1/2 tsp
  21. Cloves/Laung – 2
  22. Cinnamon /Dalchini- 1/2 inch
  23. Chili powder – 1/2 tsp
  24. Bay leaf/Tej patta- 1

Instructions

  1. Wash and peel the potatoes (peeling is optional, you can use potatoes with the skin also).
  2. Chop potatoes into small pieces, like we chop for making poha.
  3. Heat oil in the pressure cooker and then add mustard, fenugreek and urad daal.
  4. When urad daal become golden then add cloves, cinnamon, curry leaves and sugar.
  5. Let the sugar melt,then add the potato pieces, ginger and green chilies and saute for a few seconds.
  6. Add chili powder, turmeric and coriander and again saute for few seconds.
  7. Add water and pressure cook on medium heat for 1 whistle.
  8. When cooker cools down then open it and slightly mash, if needed.
  9. Now add jaggery and tamarind pulp and simmer for 2-3 minutes.
  10. Garnish with fresh coriander and serve.

anjana ji ,today I made the bhaji.it came out very well.I never put imli ,I used to out amchoor..it was superb.I am posting the recipe photo.of course I served with amras also...
