Ingredients to make Methi Makkai Malai

  • Sweet corn kernels 1 1/2 cups
  • onion medium 1
  • Green chilli 2
  • garlic 4 Cloves
  • ginger 1 inch
  • cashews 6
  • Milk 150 ml
  • Kasuri methi generously 4 pinches
  • oil 1 tbsp
  • cumin 1/2 tsp
  • Salt and pepper to taste
  • Garam masala 1 tsp
  • water if required

How to make Methi Makkai Malai

  1. Boil sweet corn kernels. Strain and keep aside.
  2. Make a paste of onion, ginger, garlic, chillies and cashews.
  3. In a non stick pan heat oil and add cumin. As they start to crackle add the paste to it and cook on medium heat till oil separates. Remember to stir continuously as cashew might stick to the base.
  4. Add milk and garam masala and give it a boil. Add corn kernels, salt and pepper powder. Add kasoori methi and cook on medium heat for 5 minutes. Check seasonings and serve hot with any sort of Indian breads or rice too.

My Tip:

I always use regular milk instead of skimmed milk while making such malai based recipes. Which makes the recipe lighter and rich at the same time.
