ABOUT Muffin uttapam RECIPE

A healthy & innovative way to serve traditional uttapams ,making a fusion combo with tandoori cuisine. A perfect blend of North and south. Took tips from a cookery show and made a child friendly dish.

Ingredients Serving: 6

  1. 1/2 kg ready made dosa batter
  2. 200 gms paneer cubes
  3. 1 capsicum diced
  4. 1 tomato diced
  5. 1 onion diced
  6. 6 to 8 mushrooms diced
  7. 1 boiled potato diced
  8. 2 tbsp hung curd
  9. Kashmiri chilli powder 1 tsp
  10. Ginger garlic paste 1 tsp
  11. Red chilli powder 1 tsp
  12. Kasoori methi 1 tsp
  13. Garam masala 1 tsp
  14. Tandoori masala 1 tbsp
  15. Achaar masala 1 tbsp
  16. Salt to taste
  17. 2 tbsp olive pil
  18. 1 tomato finely chopped
  19. 1 onion finely chopped
  20. Grated cheese for garnish

Instructions

  1. 1. Marinate all the vegetables in the above mixture and masalas for 20 mins.
  2. 2. Put under grill for around 15 mins or till they are brown and crispy.
  3. 3. Pre heat the oven at 180 degrees for 10 mins.
  4. 4. Grease a muffin tray with drops of oil or butter.
  5. 5. Pour 2 tbsp of dosa batter in each mould.top them with chopped onion and tomatoes.
  6. 6.Bake till cooked. Do the toothpick test. Once cooked brown the top with "toast"option.
  7. 7. Assemble the dish. Line the muffin uttapams in a serving dish.
  8. 8. Top with grilled vegetables. Garnish with grated cheese or cheese sauce.
  9. 9. Serve hot as a snack.
