Ingredients to make Two Cheese Crackers

  • 235 grams - all purpose flour
  • 115 grams mild cheddar cheese
  • 115 grams Colby cheese
  • 3 tsp dried oregano
  • 1 tsp chilli flakes
  • 1 1/2 tsp dried basil
  • 1 tsp salt
  • 1 tsp coarse ground black pepper
  • 1/2 cup vegetable oil
  • 1/2 cup water (you may not need at all)
  • For the spice topping:
  • 1 tsp chilli flakes
  • 1 tsp salt
  • 2 tsp granulated sugar

How to make Two Cheese Crackers

  1. Grate both the cheese and take it in a wide vessel. Add the flour, oregano, black pepper, dried basil, chilli flakes, salt in the same vessel.
  2. Mix the cheese and flour with you fingertips, it should resemble breadcrumbs.
  3. No add the oil, and again mix it with your fingertips, this mixture should resemble like wet sand.
  4. Now add water little by little, till you get a soft dough.
  5. Form a dough in two disks and double cling wrap it for several hours or overnight.
  6. Heat on 160 degree centigrade and work with a quarter of the dough at a time.
  7. Roll out the dough 1/8 th inch thickness and cut with a cookie cutter or into strips, as you like.
  8. Sprinkle with the spice topping.
  9. Place it on a lined baking tray and bake it for 20 - 25 minutes or till it looks golden brown in colour.
  10. Cool it on a wire rack and store in an airtight container.

My Tip:

Fresh herbs like oregano, thyme and rosemary taste divine. You can only use one cheese if you want, but both together definitely taste better.
