Grilled Chicken Taco Sandwich

ABOUT Grilled Chicken Taco Sandwich RECIPE

Taco is mostly associated with tortillas. Since I ran out of tortillas, I prepared all the filling traditionally meant for a taco and tossed it up in a sandwich.

Ingredients Serving: 4

  1. 4 sandwich buns
  2. 250 - 300 gms chicken boneless fillets
  3. 3 tsp taco seasoning (or more)
  4. 1 ripe avacado
  5. 1-2 cloves garlic smashed
  6. Salt to taste
  7. Sour cream as per need
  8. 1 large onion
  9. 1/2 pint Cherry Tomatoes
  10. 8-10 sweet peppers

Instructions

  1. Wash chicken. Drain and pat dry with kitchen napkin. Cut chicken in finger lengths. Marinate chicken with taco seasoning for 15 minutes.
  2. Thread chicken on wooden skewers. Heat a grill pan. Drizzle oil over the pan. Grill chicken on all sides till it's cooked and looks crisp. Remove to a plate.
  3. In the same pan, stir fry onions, tomatoes, and sweet peppers till onions change color. Set aside.
  4. To prepare the guacamole dressing--
  5. Scoop out flesh of avacado. In a bowl, mash avacado coarsely with garlic, lime juice, and salt to taste.
  6. To assemble the sandwich--
  7. Toast the buns on a heated pan or preheated oven till slightly crisp.
  8. Arrange the chicken on the bun and top it with vegetables, guacamole dressing and sour cream. Cover bun with other half.
