Ingredients Serving: 8

  1. 2 cups all purpose flour
  2. 1 teaspoon salt
  3. 2 teaspoon baking soda
  4. 1/2 teaspoon baking powder
  5. 2cup sugar
  6. 1cup oil
  7. 3 eggs
  8. 1 teaspoon vanilla
  9. 2 cups grated Zucchini
  10. 3/4 cup Oatmeal
  11. 1cup chopped walnuts
  12. 3 tablespoon Mozzarella or processed cheese


  1. Preheat the oven to 350 degrees, line a baking pan with butter paper.
  2. In a medium bowl whisk together the flour salt baking soda and baking powder and set aside.
  3. In a bowl beat sugar, oil, mozzarella or processed cheese, eggs and vanilla, stir the zucchini oatmeal and walnuts.Add the flour mixture and stir just until well combined.
  4. Transfer batter to the prepared pan, spreading evenly.Bake for 25 minutes or until toothpick tests clean.Let it cool completely in the pan.Serve it with cream cheese topping.
