Ingredients to make Chicken cheese burst pizza

  • For the pizza base: maida 500gms
  • sugar 2 tbsp
  • milk powder 1 tbsp
  • Instant yeast 3 tsp
  • oil 4 tbsp
  • water ( as needed)
  • egg 1 (optional)
  • For the cheese filling: milk 1/4 cup, cheese slice ( 12), milk powder 1 1/2 tbsp, butter 1 tbsp
  • For the pizza topping: butter 3 tbsp, garlic 4 cloves ( finely chopped), tomato puree (4 tomatoes), onions 3 ( finely chopped), bell pepper 2 ( chopped), chicken 250gm ( boiled and shredded), boiled corn, salt, red pepper powder, chilly flakes, oregano, sliced olives
  • Generous amount of grated mozarella+ cheddar cheese for topping it

How to make Chicken cheese burst pizza

  1. For the pizza base: Take half cup lukewarm water and add the yeast and 1 tbsp sugar to it. Stir it and keep it aside. In a stand mixer or with hands, combine all the dry and wet ingredients. Add the fermented yeast to it and add lukewarm water slowly and knead it nicely. Stretch and pull the dough while kneading. The dough at the end must be soft but manageable. It will take around 15 min by hand to knead and around 8 min in the stand mixer to knead the dough. Apply oil slightly to a clean bowl and transfer the dough in it and cover it with a clean damp cloth and keep it in a warm place to ferment for 45-60 min or till it doubles in size.
  2. For the cheese filling: In a microwave safe bowl tear the cheese slices and add the other ingredients and microwave it in short bursts of 15 seconds till you get a nice homogenous paste. Keep it aside to cool.
  3. For the pizza topping: In a deep pan add butter and when it starts to melt add the chopped garlic. Saute it till it turns transparent. Add the chopped onion and saut till they turn transparent. Add the tomato puree and add the salt and red pepper powder and cook on slow flame for 15 min. After that add the bell peppers and cook till soft. Add the oregano, chilly flakes, chicken, boiled corn and olives and turn off the stove. Check for taste.
  4. For the assembly: Pre heat the oven to 220 C for 15 min. Also put the pizza pan in the oven so that also gets heated. Divide the pizza dough into 2/3rd and 1/3rd part. The 2/3rd part will be used to make the pizza base and 1/3rd for rotis( the size of the pizza). Now divide both the dough into 4 parts. Roll the pizza base dough to the size of the pizza pan. Apply a nice layer of the cheese filling in the centre and avoid applying at the edges. Now with the other dough ( the 1/3rd part), make a thin roti the same size of the pizza and roast it gently on a tavi.Put this on top of the cheese filling and slightly pinch the edges to that it doesn't leak. On top of it spread the pizza topping generously and top with grated mozarella+cheddar cheese combination. Trasfer it gently in the hot pizza pan and bake in the oven for 10- 15 min or till the cheese is slightly browned and so is the pizza rim.
