Ingredients Serving: 4

  1. For the bread base:
  2. Maida 500gm
  3. instant yeast 3 tsp
  4. olive oil 4 tbsp
  5. Salt 1 1/2 tsp
  6. sugar 1 tbsp
  7. lukewarm water ( approximately 1 1/2 cup)
  8. For the bread filling:
  9. butter 2 tbsp
  10. olive oil 2 tbsp
  11. cheddar cheese and mozarella cheese grated ( as much as you wish!)
  12. sliced tomatoes 2
  13. red, yellow and green capsicum chopped 1 each
  14. jalapeos (half cup)
  15. sliced olives (half cup)
  16. boiled corn ( optional)
  17. cheese slices 12-15
  18. Salt, pepper, oregano, chilly flakes according to taste

Instructions

  1. For the bread dough: In approximately half cup lukewarm water add the yeast and sugar, stir it and keep it aside to froth for 5-10 min. Add the other dry and wet ingredients in your stand mixer bowl or your kneading bowl. Add the activated yeast to it and start kneading it. It will take approximately 15 min to knead with hand and 8 min with stand mixer. The dough must be soft and sticky to touch but must be of the consistency that can be easily handled. Oil another clean bowl and transfer the kneaded dough in it and cover with a damp cloth. Keep it aside to ferment in a warm dark place for 45 min or till it doubles in size.
  2. For the pizza filling: Line a baking tray with foil paper. Put the chopped and sliced vegetables on it. Sprinkle with salt, oregano, red chilly flakes, pepper powder. Pour the melted butter and oil on top and bake it in a pre heated oven at 150C for 20 min.
  3. Assembly: Pre heat the oven to 220 C for 15 min. Prepare two loaf tins. Grease and line it with a baking paper. Divide the dough into two equal parts. Now roll the dough into a big square. Spread the pizza filling over it and generously put the grated cheese over it. Now cut the big square again in to small squares. Try to get approximately 12 squares from each rolled square. Now fold each small square into half ( it will look like a rectangle now). Now in each loaf pan carefully arrange the square with the open edge facing the top and in between each square add half a slice of cheese slice. So each loaf pan will have 12 squares each. Put the loaf pan in the oven and bake for 30-45 min or till the top starts to become golden brown. Keep it for more 10 min in the closed oven after its switched off.
