ABOUT Apple Gourd in Sage Butter Sauce RECIPE

Ingredients Serving: 5

  1. 10 apple gourds (teende)
  2. 1 large onion - finely chopped
  3. 1 large tomato- finely chopped
  4. 1 inch ginger- crushed
  5. 8 cloves garlic- crushed
  6. 4 tablespoon- aam ke aachar ka masala
  7. 1 tablespoon garlic paste
  8. 1 tablespoon dry sage leaves
  9. 2 green chili- finely chopped
  10. 1 teaspoon cumin
  11. 1 teaspoon carom (ajwain)
  12. 1 teaspoon kashmiri red chili powder
  13. 1 teaspoon turmeric powder
  14. 1 teaspoon corn starch
  15. 1 tablespoon olive oil
  16. 4 tablespoon butter
  17. Salt to taste

Instructions

  1. Wash, peel and cross slit all of the apple gourds. Keep aside.
  2. In a wok heat olive oil, add jeera, ajwain, crushed ginger and garlic. Once aromatic add onions and saute' until golden.
  3. Now add turmeric powder, red chili powder and chopped tomatoes. Saute on low heat for a minute. Now add a teaspoon of salt and saute. Add a cup of water and let it simmer for 5-8 minutes on low heat.
  4. Meanwhile in a small mixing bowl add aachar masala, ginger - garlic paste and very finely chopped green chili. Mix well
  5. Gently fill each gourd with this masala. Once done add them to simmering sauce. Also add one cup of water mixed with corn starch. Cover the wok and let it cook for ten minutes on low heat.
  6. To make sage butter sauce- just heat the butter until its nutty in color with dried sage leaves in it. Keep aside
  7. Check gourds, if firm and soft all through then turn off the heat. Spread remaining achar masala on top and drizzle sage butter sauce over top. Serve hot!
