Creamed Spinach in Baked Potatoes

Ingredients to make Creamed Spinach in Baked Potatoes

  • 6 small potatoes
  • 1 cup spinach (blanched & chopped)
  • 1/2 cup sour cream
  • 4-5 mushrooms (finely chopped)
  • 3 tbsp butter (Amul)
  • 1 tbsp brown sugar
  • salt as per taste

How to make Creamed Spinach in Baked Potatoes

  1. Wash the potatoes well and bake them with skin for 30-35 minutes at 180-200 degree C, until almost cooked.
  2. Wash & blanch the spinach and the mushrooms separately. Chop them finely.
  3. In a pan, add 1 tbsp butter. Saute the chopped spinach for 1-2 minutes. Then add the sour cream and salt & mix well. Cook a little and keep aside.
  4. In another pan, add 1 tbsp butter and add the chopped and blanched mushrooms and saute well. Now add the brown sugar and keep stirring until it caramelizes. Keep aside.
  5. Cut the upper one fourth of each potato and scoop out the inner part. Add a little butter in each one. Fill in the creamed spinach and top up with the caramelized mushrooms.
  6. Bake again for 15 minutes or until the potatoes are well cooked. Enjoy!
