Banana Waffles with Butterscotch Sauce

Ingredients to make Banana Waffles with Butterscotch Sauce

  • 1/2 cup all purpose flour
  • 1/2 cup oats powdered/crushed
  • 1/2 cup brown sugar
  • 2 tablespoon olive oil
  • 1 small banana - ripe & mashed
  • 1 teaspoon baking powder
  • For butterscotch sauce - 1 cup full cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla essence
  • 1 cup softened salted butter

How to make Banana Waffles with Butterscotch Sauce

  1. Mix all purpose flour, oats powder and baking powder in a mixing bowl. Keep aside.
  2. In another bowl, add sugar, olive oil and banana. Beat until creamy and smooth. Add a little water if needed.
  3. Combine wet ingredients with the dry ingredients. Form a thick runny batter.
  4. Heat a wafflemaker and drizzle a little olive oil on it. Spread a ladleful of batter and cook until medium dark and slightly crispy.
  5. To make the sauce - put all the ingredients in a saucepan and bring to boil. Simmer for a minute or two or until it changes color.
  6. Drizzle the sauce on top of hot waffles. Garnish with some nuts and serve hot with a cup of coffee.

My Tip:

Try not to make very thin batter or you'll end up with a flat bread.
