Orange and Coconut Cake

Ingredients to make Orange and Coconut Cake

  • 2 cups all purpose flour
  • 1+1/2 tsp baking powder
  • 1+1/2 tsp baking soda
  • A pinch of salt
  • 1 cup thick yoghurt/curd
  • Fresh juice from one orange
  • Orange zest from one orange
  • 1/4 cup oil or butter
  • 1 tsp orange essence
  • 1/4 cup grated coconut
  • Orange food color (optional)

How to make Orange and Coconut Cake

  1. In a bowl, sift the flour, baking powder, baking soda and salt thrice and keep aside.
  2. In another bowl, mix yogurt, orange juice, essence, oil or butter and beat well with a hand mixer until fluffy. Add orange zest.
  3. Mix the dry ingredients into the wet ingredients, little at a time and gently fold in until well combined.
  4. Add half of the grated coconut into the batter.
  5. Line the baking dish with butter paper and sprinkle some grated coconut at the bottom. Pour the batter into it and sprinkle the remaining grated coconut on the top.
  6. Bake at 180 degrees C for 30-35 minutes or until a toothpick comes out clean. Enjoy!

My Tip:

This fruity orange cake can also be made in the same way with lemon flavour.
