Ingredients to make Khushka

  • 2 cups washed and soaked basmati rice.
  • 1/2 cup fried onions.
  • 1/2 cup chopped coriander leaves.
  • 2 lemon.
  • Chopped almonds, casheew nuts and raisins.
  • ghee 6 tbsps.
  • 4-6 pods cardamom.
  • 2 bay leaves
  • 1 stick cinnamon.
  • 5 cloves.
  • 3 small pudina sticks ..
  • salt as per taste...
  • Water to boil rice...
  • Few peppr corns.
  • Rose water.
  • Garam masala powder..
  • lemon yello food colour in water or saffron infused in milk.

How to make Khushka

  1. In a large vessel add water and let ot boil well..
  2. Add whole garam masalas , cardamom, pepper corns, cinnamon stick, cloves, bay leaf...
  3. Add basmati rice and add salt 3 tsp... Wait for it to cook...
  4. Keep a close watch on the rice... cook it 80% only .. when its 80% done squeeze a lemon juice and add 1 tsp ghee... and then strain it using a strainer ...
  5. In a heavy bottom pan, add a tsp of ghee, and spread 1 layer of rice... sprinkle some saffron infused milk or lemon yellow food colour... also spread fried onions, chopped coriander leaves, almonds, cashew nuts and raisins...
  6. Make another layer of rice and repeat with coriander leaves, nuts , colour ..
  7. Sprinkle a pinch of garam masala powder, and a dash of rose water or kewra water... Spread pudina leaves... Drizzle ghee on top...
  8. Cover with foil paper, and time to steam... or to let it cook on dum... Keep a plate underneatg the vessel to avoid rice from burning or sticking at the bottom... Let it cook on low flame for 5 - 10'mints or until dum...
  9. Remove in a plate and serve...

My Tip:

Khushka is the top layer of rice in the biryani... without masala.. It is served like ghee rice.. served best with korma, curry, gravy, salad,... Use a good quality basmati rice.. and the straining time shoukd be perfect to give the beast results...
