Ingredients to make Eggless Cooker Coconut Cake

  • maida 1 cup
  • Fresh coconut 1 Cup grated + some extra for topping
  • butter 50 gms
  • sugar 100 gms
  • butter Milk 80 ml
  • baking soda 1 Tsp
  • Vanilla essence 1/2 tsp
  • For the glaze:
  • butter milk 2 tbsp
  • Confectioners sugar 6 tsp
  • Vanilla essence 2 drops

How to make Eggless Cooker Coconut Cake

  1. Grease the cake pan with butter and set aside.
  2. Take the pressure cooker and place a separator or a stand for the cake pan on the bottom so that the cake pan does not directly touch the cooker bottom.
  3. Pre heat the pressure cooker on stove on medium heat uncovered for 5 mins.
  4. In a mixing bowl add sugar, butter, vanilla essence and whisk nicely till the butter and sugar dissolves. Add the butter milk.
  5. Add the flour and baking Soda and gently fold and make a smooth batter.
  6. Add the coconut and mix nicely. Pour this batter into the cake pan.
  7. Simmer the heat and carefully place it into the pressure cooker.
  8. Remove the gasket and whistle from the cooker cover.
  9. Cover it and Cook on a low heat for 40 mins.
  10. After 40 mins a tooth pick inserted should come out clean, If not cook for another 5 mins.
  11. Turn off the heat, remove the lid and let the cake be in the cooker for 5 mins.
  12. Meanwhile prepare the glaze. In a small bowl add the butter milk, vanilla essence, the confectioners sugar and whisk together nicely untill smooth.
  13. Remove the cake from the cooker carefully and invert the cake in a serving plate.
  14. Drizzle the glaze over cake and sprinkle with the remaining coconut. Cut and serve.
