Makke ki Roti and Sarso da Saag

ABOUT Makke ki Roti and Sarso da Saag RECIPE

Authentic Punjabi delicacy, so buttery so yummy.

Ingredients Serving: 2

  1. For makke ki roti:
  2. Corm meal/makke ka aata -2 cups
  3. Salt to taste
  4. A tsp of oil(or butter)
  5. Water to make stif dough
  6. For Sarso da saag:
  7. Fresh mustard leaves (sarson)5 bunches
  8. Fresh spinach leaves (palak)1 bunch
  9. Bathua1 bunch
  10. Olive oil 5 tablespoons (Or sarson/mustard oil or Butter)
  11. Ginger sliced 2 one-inch pieces
  12. Garlic sliced 6-8 cloves
  13. Onions sliced 2 medium
  14. Green chillies 4
  15. Salt to taste
  16. Cornmeal 2 tablespoons

Instructions

  1. For Roti:
  2. Mix all the ingredients together and make a paratha like dough.
  3. Heat a tawa, make a ball of the the dough and pat it with hand on a platform or a board keep dusting dry atta if needed and make a flat 1/2 cm thick Roti.
  4. Put it on the hot tawa and on medium flame cook it till light brown then flip it other side and cook till you see nice dark brown spots. Then transfer it on a net and roast on direct flame for few seconds or till it puffs.
  5. Serve it hot with a dollop of butter. Serve with "Sarso da Saag".
  6. For Saag:
  7. Heat three tablespoons oil/butter in a pan, add ginger, garlic and onion and saut for two to three minutes. Roughly chop mustard leaves.
  8. Add salt to taste and stir well. Let it cook till the greens turn soft.
  9. Add cornmeal dissolved in a little water and continue to cook till the greens are completely cooked. Cool and grind to a coarse paste.
  10. Transfer into the pan. Simmer for two to three minutes.
  11. Garnish with dollop of Butter and serve hot.
  12. Serve hot with makki ki roti.
