Ingredients to make Smoked Salad with Honey Chilli Dressing

  • Broccoli florets 1 cup
  • Asparagus stalks 8-10
  • carrot 1 cut into thick chunks
  • 8 button mushrooms halved
  • Half cup green peas
  • 1 cup paneer cubed
  • 1 cup mixed bell peppers cut into quarters
  • 1 onion cut into wedges
  • 1 tsp each grated ginger and garlic
  • Salt and pepper as per taste
  • honey 1 tbsp
  • chilli sauce 1 tbsp
  • olive/sesame oil 2 tbsp
  • lime Juice 1 tsp
  • Mixed herbs 1 tsp
  • Fresh parsley or basil to taste
  • 1 tsp soya sauce

How to make Smoked Salad with Honey Chilli Dressing

  1. Blanch broccoli, asparagus, peas and carrots. Heat oil in a wok and add ginger and garlic. Add onion and bell peppers. Saute on high flame for a min. Add all other veggies and mix properly and keep it on high flame for 20 seconds and switch off. Take it out in a bowl.
  2. Mean while put a piece of coal on direct flame until it turns red hot. Marinate paneer with salt pepper, a little chilli sauce, olive oil and keep aside for 10 minutes.
  3. Grill paneer on both sides till marks appear, add it to veggies. In a small bottle Mix remaining olive oil, honey, lime juice, chilli sauce, salt and pepper and soya sauce and shake it properly and add it to salad. Mix.

Put the hot coal in the small bowl and pour a tsp of ghee over it and cover the salad bowl tightly with a lid for half a minute and let the smoky flavours incorporate. Open the lid, remove the bowl with coal and discard. Mix the salad. Serve garnished with fresh basil or parsley.

My Tip:

I sometimes add toasted bread and cheese to it and it tastes amazing. You can also serve this as filling on open sandwich with a mix of basil pesto and cheese spread
