Ingredients to make Eggless Semolina & Coconut Cake

  • 1 cup semolina
  • 1/2 cup powdered sugar
  • 1/2 cup all purpose flour
  • 1/2 cup milk powder
  • 1/2 cup melted butter
  • 1 cup curd
  • 1/2 cup grated fresh coconut
  • Pinch of salt
  • 1 tsp vanilla essence
  • 1 tsp Baking powder
  • 1/2 tsp baking soda
  • 3 tbsp water
  • For sugar syrup
  • 1 cup sugar
  • 3/4 cup water
  • 1 tbsp of lemon juice

How to make Eggless Semolina & Coconut Cake

  1. In a bowl mix all the dry ingredients.
  2. In another bowl take all the wet ingredients.
  3. Now pour the wet ingredients to the dry ingredients and mix well.
  4. Pour the batter to the greased baking tray.
  5. Preheat oven 180 .c and bake it for 40 minutes until the top turns golden brown or till done.
  6. While the cake is baking, prepare the sugar syrup.
  7. For sugar syrup, boil sugar with water till it slightly thickens.
  8. Remove the sugar syrup from flame and add lemon juice to it.
  9. Cut the cake to your desired shape and pour the syrup over the cake while its still warm.
  10. Let it rest for at least half an hour or till the cake absorbs the sugar syrup.
  11. Sprinkle some grated fresh coconut and serve.
