ABOUT Mango Pickle RECIPE

A typical UP style pickle I learnt from my aunt.

Ingredients Serving: 6

  1. Raw mango 2 kg
  2. Haldi powder 1tbsp
  3. Salt as per taste +1 tbsp
  4. For the masala: coriander seeds 50 gms
  5. Red chilly 25 gms
  6. Fennel seeds 10 gms
  7. Ajwain 10 gms
  8. Kalaungi 5 gms
  9. Yellow mustard seeds 10 gms
  10. Mustard oil 500 gms
  11. Garlic 100 gms

Instructions

  1. Wash the mangoes nicely and cut dem into small cubes, apply haldi powder and salt to the pieces and mix it properly with your hands .
  2. Leave it for about 2 -3 hours or best overnight. agn wash dem under runing water and let dem dry under d sun for 5- 6 hrs or till dey r dry frm outside and still d inner part is moist
  3. Now wash d coriandr seeds and red chillies(dint remove d stem b4 washing d chillies).keep dem for drying ..until cmpltly dried
  4. After drying break d stem of d chillies .nw dry roast all d ingredients separately xcept d mustard seeds and grind dem into a fine pwdr
  5. Also grind d mustard seeds
  6. Dry roast d garlic and grind it to a fine paste
  7. Mw mix all d masala 2gether also add salt and abt 2 tbsp mustard oil.
  8. Add d dried raw mangoes to d mixture and mix it very nicely wid ur hands .check for seasoning and adjust .
  9. Keep dis pickle in a glass container and add more of mustard oil
  10. Cover d container wid a clean muslin cloth and tie it up .keep it under d sun.
  11. Dont use water to xtended d lyf of d pickle
