A typical UP style pickle I learnt from my aunt.

Wash the mangoes nicely and cut dem into small cubes, apply haldi powder and salt to the pieces and mix it properly with your hands .
Leave it for about 2 -3 hours or best overnight. agn wash dem under runing water and let dem dry under d sun for 5- 6 hrs or till dey r dry frm outside and still d inner part is moist
Now wash d coriandr seeds and red chillies(dint remove d stem b4 washing d chillies).keep dem for drying ..until cmpltly dried
After drying break d stem of d chillies .nw dry roast all d ingredients separately xcept d mustard seeds and grind dem into a fine pwdr
Also grind d mustard seeds
Dry roast d garlic and grind it to a fine paste
Mw mix all d masala 2gether also add salt and abt 2 tbsp mustard oil.
Add d dried raw mangoes to d mixture and mix it very nicely wid ur hands .check for seasoning and adjust .
Keep dis pickle in a glass container and add more of mustard oil
Cover d container wid a clean muslin cloth and tie it up .keep it under d sun.
Dont use water to xtended d lyf of d pickle
