Ingredients Serving: 4

  1. Arbi 1/2 kg
  2. Hing a pinch
  3. Cumin seeds1/2 tsp
  4. Powdered pomegranate seeds 1/2 tsp
  5. Chopped ginger and garlic 2 tbsp
  6. Fried onion paste 3/4 cup
  7. Tomatoes finely chopped 1 cup
  8. Turmeric powder 1 tsp
  9. Garam masala 1/2 tsp
  10. Red chilli powder 1 tsp
  11. Green chilli chopped 3
  12. Dried methi 1 tbsp
  13. Pav bhaji masala 1 tbsp
  14. coriander powder 1 tsp
  15. Coriander leaves for garnishing
  16. Oil for deep frying and cooking
  17. Salt to taste

Instructions

  1. Peel arbi ,wash and spread it on kitchen towel to dry.
  2. If medium-sized cut in half or else in three.
  3. Heat oil in pan for deep frying and fry arbi till done or brown in color.
  4. In pressure cooker heat 2 tbsp oil, add hing.
  5. Add pomegranate seed powder, cumin seeds,ginger,garlic,onion paste,turmeric,red chilli,green chilli saute for 5 minutes.
  6. Then add tomatoes
  7. When oil separates add 1/4 cup of water bring to boil and mix in fried arbi, coriander powder, dried methi,salt and put on the lid.
  8. After 3 whistle open sprinkle pav bhaji masala, garam masala mix gently.
  9. Garnish with coriander leaves.
