Ingredients: 200 g All purpose flour; 85 g caster sugar; Zest of 2 big oranges; 125g soft unsalted butter; 2 egg yolks; 1 teaspoon baking powder; 1/8 teaspoon salt; 1 drop orange food colour optional; 1 tbsp blanched almonds chopped optional

Ingredients Serving: 6

200 g All purpose flour
85 g caster sugar
Zest of 2 big oranges
125g soft unsalted butter
2 egg yolks
1 teaspoon baking powder
1/8 teaspoon salt
1 drop orange food colour optional
1 tbsp blanched almonds chopped optional

Instructions

Sieve flour, baking powder and salt in a bowl. Keep it aside
Blend butter in a bowl for 1 min
Add sugar and blend for 4-5 minutes on moderate speed
Add egg yolks and blend for 2 minutes
Add orange zest and mix well
Add food colouring, this is optional. I added it to give beautiful orange colour to cookies. Mix well
Add dry ingredients. Using spatula, mix well
Dust surface with flour. Transfer contents on surface
Knead into soft dough. Cover dough with cling wrap. Refrigerate for 20 minutes
Divide dough into small portions. Shape into balls and slightly flatten it. Place them on prepared baking tray leaving gap between the cookies
Add chopped almonds on top for additional taste. This is optional
Bake for 11-14 minutes in preheated oven at 170 until edges are light brown. Do not over bake
Cool on tray for 15 minutes. Cool on wire rack completely
Store in airtight container and serve as required. These are melt in mouth soft delicious tangy cookies
