ABOUT Charred paneer and garlicy mushroom in lemon cream butter sauce with toasted walnuts RECIPE

Paneer and mushroom is a classic combo. I have tried to come up with a yum recipe using these two in a butter-based sauce.

Ingredients Serving: 4

  1. 100 gm paneer or tofu
  2. 12 whole mushrooms, washed and cut lengthwise into two pieces
  3. 4 tablespoon Amul fresh cream
  4. 4 tablespoon butter
  5. 2 tablespoon olive oil
  6. 3 tablespoon fresh lemon juice
  7. 4 garlic cloves, chopped finely
  8. Salt to taste
  9. 1/2 teaspoon black pepper powder
  10. 1 teaspoon red chilli flakes
  11. 2 tablespoon walnuts, toasted and roughly chopped
  12. Mint leaves to garnish (Optional)

Instructions

  1. In a non stick pan, heat the olive oil and butter on full flame.
  2. Saute the mushroom for 5 minutes till light golden in colour. Remove when done and keep on a paper towel to drain off the oil/butter.
  3. Now, to the same oil and butter in the pan, add the chopped garlic and saute for 1 minute.
  4. Reduce the flame to low.
  5. Add the cream, lemon juice and whisk till the sauce comes together. Hardly takes 3-5 minutes.
  6. Season with the salt, black pepper and red chilli flakes.
  7. Turn off the flame.
  8. Now, char the paneer/tofu on iron griller or shallow fry on tawa.
  9. Can char it on direct flame as well with the help of tongs.
  10. To serve, arrange the paneer and mushroom pieces on a plate and pour the sauce all around.
  11. Sprinkle toasted walnuts all over.
  12. Additionally garnish with fresh mint leaves as well.
