Chicken Biryani

Ingredients to make Chicken Biryani

  • chicken - 3/4 kg
  • Basmati rice - 3 cups
  • onions - 4
  • Whole spices 2 each
  • For the Marinade :
  • curd - 3/4 cup
  • green chillies - 4
  • ginger garlic paste - 2 tsp
  • Whole spices: 3 cloves
  • 3 cardamom
  • 3 elaichi
  • 2 star ainse
  • Few bay leaves
  • Small piece of nutmeg ground
  • red chilli powder - 2 tsp
  • turmeric - 1 tsp
  • Kasuri methi - 1 tsp
  • few curry leaves
  • Handful of pudina leaves
  • salt to taste
  • 1 onion shredded

How to make Chicken Biryani

  1. Wash and marinate the chicken by covering it and keep in the fridge for an hour.
  2. Take a biryani utensil, add 2 to 3 tbsps of oil and some ghee.
  3. Add the whole spices, sliced onions and fry them till they turn brown.
  4. Add the marinated chicken, let it cook till the oil separates.
  5. Add the washed and soaked rice. Next add in 4 cups of water.
  6. Salt to taste and let it come to a boil. Squeeze in half of the lemon. Stir and cover with a lid.
  7. Keep some weight on the lid so that steam does not escape. Let the rice cook on low heat. It takes around 15 minutes for the rice to cook.
  8. Serve with dahi raita.

My Tip:

I always make it a point to squeeze half a lemon for any biryani or pulav before covering it with the lid. This helps every grain to separate out.
