ABOUT Serradura (Sawdust Pudding) RECIPE

Serradura means sawdust in Portugese. I was looking for different world cuisines and came by this. Very easy to make and sounded yum so I had to try it. Since the first time it's become a favourite with family and friends. The beauty of it is that you can change flavours to your liking and it still tastes good

Ingredients Serving: 8

  1. 150 gms digestive biscuits
  2. 400 ml Whipping cream
  3. 400 gms condensed milk
  4. 15 gms Gelatin and a bit of warm milk or water (optional)
  5. 6 lemon juice

Instructions

  1. Make the biscuits into a fine crumb.
  2. Put the gelatine in the warm milk or water and keep stirring till the gelatine dissolves (if using it)
  3. Whisk the condensed milk. Add the cream and continue whisking. Add the gelatine and whisk till properly blended. About 4-5 whisks should do. Add the lemon juice and gently stir it in with a spoon till well mixed. Taste it for acidity.
  4. In a glass bowl take 1/3 of the biscuit crumbs and press them down. Gently pour in 1/2 the milk/cream mixture. Sprinkle half the remaining biscuit crumbs on it.
  5. Repeat the process of putting in the milk/cream mixture and top with the remaining crumbs. Put it in the frig not freezer for minimum 3-4 hours.
