Vegetable Shikampuri Kebab

Ingredients to make Vegetable Shikampuri Kebab

  • 1 cup chopped carrot
  • 1/2 cup chopped beans
  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped cabbage
  • 4 boiled potatoes
  • 2 chopped green chillies
  • 1 tsp grated ginger
  • 1/2 tsp turmeric
  • 2 tsp chili powder
  • 1 tbsp coriander
  • 1 tbsp chopped mint
  • salt to taste
  • 2 tsp oil
  • Bread Crumbs
  • For dry masala: 1 tsp jeera
  • For dry masala: 4 green ilaichi
  • For dry masala: 3 solid black pepper
  • For dry masala: 2 laung
  • For dry masala: 2 blades javitri
  • For dry masala: 1/2 tsp ajwain
  • For filling: 1/4 cup grated paneer
  • For filling: 1/4 cup mawa
  • For filling: 1/4 cup hung curd
  • For filling: 1 tbsp mint chopped
  • For filling: salt to taste

How to make Vegetable Shikampuri Kebab

  1. 1. For the filling: In a bowl mix all filling ingredients, keep aside.
  2. 2. In a pan heat oil and add ginger and green chili. Next add rest of the ingredients except the bread crumbs. Cook for 5 minutes. Remove from flame and add bread crumbs. Add dry masala, green chili and rest of the paneer filling.
  3. 3. Flatten balls and stuff filling and shape them into kebabs. Keep in fridge for some time to rest.
  4. 4. In another bowl take corn flour and water.
  5. 5. Take sewainya (mash them) in another plate.
  6. 6. Dip ball in corn flour and water mixture & coat with sewainya
  7. 7. Shallow fry and serve.
