Ingredients to make Rice dumpling with stuffed chana dal / Pitha

  • For Pitha:
  • Rice flour - 1 1/2 cup
  • Milk - 2 cups
  • water - 1/2 cup
  • salt as per taste
  • cardamom powder - 1/2 tsp
  • ghee - 2 tsp
  • For the chana dal Stuffing:
  • chana dal - 3/4 cup
  • ginger - a little
  • green chillies - 2
  • turmeric powder - 1/2 tsp
  • jeera powder - 1/2 tsp
  • Sabut jeera - 1 tsp
  • oil for frying
  • salt as per taste

How to make Rice dumpling with stuffed chana dal / Pitha

  1. Soak chana dal for 4-5 hours .Drain all the water, grind with ginger and chillies without any water. Keep it little coarse.
  2. Now in a pan add 1.5 tbsp oil.Add jeera seeds,when it splutters, add the dal mixture. Cook in low flame. Add turmeric, jeera powder, salt and mix well. Cook till consistency becomes little crumbly. Turn off the flame and keep aside.
  3. Take a kadai, add milk and water. When it boils, add salt, cardamom powder and ghee. Now gradually add the rice flour while stirring continuously. When the mixture thickens, turn off flame and let it cool. When the mixture is just warm enough to be touched, knead it well to form a soft dough.You can add little ghee while kneading.
  4. Now pinch small balls from the dough, flatten and make a well in the centre of each ball, stuff with the chana dal filling, close from all sides. You can give any shape of your choice, I gave a gujia shape. Similarly make all the gujiyas and steam in the steamer on high flame for 20 minutes.
  5. Serve hot with coriander and coconut chutney.

My Tip:

To make very soft pithas, using milk is important.Always take less of rice flour and more of the milk, water mixture. Keep stirring while mixing. You can always add more flour if consistency is little thin. Lastly knead the dough well.
